Can you change our locks outside trading hours?

Yes, and for most shopfronts that is the sensible way to do it. We schedule the change for after close or before open so you never lose a trading hour to a locksmith on the floor.

A staff member left and did not return their key. What now?

If you are on standard keys, the honest answer is that you do not know how many copies exist, so rekeying the affected cylinders is the only way to be sure. If this keeps happening, a restricted key system is the fix — copies can only be cut by us, only for an authorised signatory.

Are we allowed to fit a deadlock on the fire exit?

No — a fire exit must open from the inside without a key, and fitting a deadbolt to one is both a compliance failure and a genuine danger. There is compliant hardware that secures the door from outside while leaving free egress from inside, and that is what we fit.
